Brazo De Mercedes

Brazo de Mercedes is a rich and melt in your mouth dessert with a custard filling rolled in a baked meringue.  Making this Filipino dessert can be tricky but it’s well worth the effort once you taste its heavenly goodness! (As long as you whip your eggs properly you will find this an easy to make recipe)

Meringue:

  • 10 egg whites
  • 2/3 cup sugar
  • 1/2 tsp. cream of tartar

Filling/Custard:

  • 10 egg yolks
  • 1 can condensed milk
  • 1/3 cup of evaporated milk
  • 1 tbsp. butter
  • 1 tsp vanilla
  • 1 tsp lemon zest/pinch of salt

Directions:

  1. Combine egg whites and cream of tartar in a  large bowl then beat using an electric mixer until soft peaks form.
  2. While mixing, gradually add the granulated sugar .  Continue mixing until stiff peaks form.
  3. Preheat the oven to 350 degrees F.
  4. Place parchment paper on top of a large baking pan.
  5. Pour the Meringue(egg whites mixture) on top of the prepared baking pan then spread evenly using a spatula.
  6. Bake the meringue for 18-20 minutes or until the color of the top turns light to medium brown.
  7. While the meringue is in the oven, make the filling.
  8. In a small cooking pot, combine the egg yolks, condensed milk and evaporated milk.  Apply heat and continue stirring until the texture becomes thick.
  9. Add the butter, pinch of salt, lemon zest and vanilla extract .  Mix thoroughly and continue stirring for about 1-2 minutes and then turn off the heat.  Set aside.
  10. Remove the meringue from the oven and let it cool down for a few minutes.
  11. Sprinkle the powdered sugar on top of the meringue.  Place parchment paper followed by  another similar sized  baking pan on top of the meringue .
  12. (The meringue should now be sandwiched in between the two baking pans)
  13. Flip the meringue by holding both pans tightly.(The new baking pan should be on the bottom now). Remove the tray and the parchment paper gently to make sure it will not break.  Spread the prepared filling over the meringue.
  14. Roll the meringue starting at the longest side. (Filling should now be inside).
  15. Refrigerate for at least 30 minutes before serving.  It is best to eat cold.
  16. Share and enjoy your Brazo de Mercedes!
