Pork Adobo

Adobo is a popular dish in the Philippines. It is different than the other kinds of Adobo because it doesn’t have the oregano and Chili. There are way to many different ways to cook this recipe with different meats or ingredients but for our family this is our favorite, if you love pork belly this recipe is even better made with pork belly but we chose to put just regular pork in this recipe because some people do not want all of the fat.

Ingredients:

  • 2.5 lbs pork
  • 5 cloves garlic, minced
  • 1 medium onion
  • 2 tablespoons soy sauce
  • 1 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon peppercorns
  • 3 pieces dried bay leaves
  • 1 cup water
  • 1/4 teaspoon sugar
  • 2 tablespoons vinegar
  • salt and pepper to taste
  • 2 tablespoons cooking oil
  • oil for frying

Directions:

  1. In a large pan, heat oil and brown the pork.  Set aside.
  2. Using the same pan, pour out the oil and leave about 2 teaspoons.  Lightly brown the garlic.  Add the onions and saute for 1-2 minutes.
  3. Add the set aside pork, soy sauce, pepper, garlic powder, peppercorns, bay leaves, and sugar.  Stir for 5 minutes.
  4. Add water and mix.
  5. Cover and simmer under medium heat for 30-45 minutes or until tender.  Stir occasionally.
  6. Add the vinegar and simmer for another 5 minutes.  If you still have a lot of sauce and you prefer it to be a little dry, just take the cover off and continue simmering.
  7. Sprinkle salt and pepper to taste(optional) and simmer for 1-2 minutes then turn off heat.  Serve hot.
  8. Share this pork adobo recipe and enjoy!
